Miso Fish Head Soup

I bought this Korean Miso Pastes from NTUC and i tried to cook the Miso with fish head ;)

无花果西洋菜汤

Nowadays weather in Singapore is perpetually hot and humid. So the best way to cool down 无花果西洋菜汤 :)



(Ingredients)

(Serves 2-3)

- 250g pork ribs
- 3 Honey dates
- 6 Dried Figs “Wu Hua Guo” (无花果)
- 2 tbsp Nan Xing (南杏)
- 1 tbsp Bei Xing (北杏)
- 1 tbsp wolfberries, soaked in a small bowl of water till puffy
- 200g watercress
- 1300 ml water
- salt

(Directions)

1) Blanch pork ribs in boiling water for about 5 minutes, to remove the scum so that you have clear soup later.

2) In a large soup pot, add water, Honey dates,Dried Figs “Wu Hua Guo”, Nan Xing & Bei Xing ( blanched pork ribs and watercress. Bring to a boil, then lower heat and simmer (with lid partially closed) for about 40 minutes.

3) Five minutes before you turn off the flame, add the soaked wolfberries. Season with salt and serve with steamed rice.

Kid’s Happy Meal

“Kid’s Happy Meal! It’s the Home cooked ABC Soup!”



Serves 4

Ingredients

6 pieces of leaned meaty pork ribs, blanched
2 regular carrots, cut into medium pieces lengthwise, and halves each piece if too thick, especially the beginning part.
2 ear of sweet corn, chopped into 8 pieces lengthwise (about 4cm each)
2 medium potatoes, peeled and cut into big pieces
1 large onion, peeled and cut into quarters
1 fresh tomato, halves
1 cup of whole button mushroom
Pinch of salt to taste
1 teaspoon of sesame oil (or vegetables oil)
1 big pot of water (about 1500ml), 50% filled

Method

1) Heat up a pot, add oil. Sauté onion till fragrant. Quickly pour in water and bring to a boil over high heat.

2) Add blanched pork ribs, mushrooms and all vegetables, except for tomato.

3) Reduce heat to low fire. Covered with lid. Simmer for 1 hour, or longer, if desired. Add tomato and sprinkle salt to taste, 5 min before heat off. Serve hot.

苦瓜萝卜排骨汤

Today, we are going to have this 苦瓜排骨汤 for our dinner.

Ingredients:

250g Pork Ribs,排骨
1 Small Bitter Gourd,苦瓜
1 Small Carrot,红萝卜
4-5 Red Dates,红枣
1 Tablespoon Gou Qizi,枸杞子
2 Slices Ginger,老姜


Methods

1. Wash and blanch pork ribs in boiling water, and then remove them from the water.

2. Wash and cut the bitter gourd into 1" thick rings and rub the flesh with some salt to reduce it's bitter taste.

3. Wash and cut the carrot into 1" thick rings too.

4. Bring a pot of water over high heat, add the Bitter gourd, Carrot, Red Dates, Gou Qiziand, Ginger into the pot bring to boil for 10 minutes over medium heat

5. Add in the pork ribs then continue to simmer over low heat for 30 - 45 minutes, season with some salt and serve.

银耳玉竹清润汤

I saw this 银耳玉竹清润汤 at 我的厨房笔记 so i decided to cook this soup for my family today..



~~ 银耳玉竹清润汤 ~~

材料1
银耳 : 20g (洗净, 泡软, 撕成小朵)
玉竹 : 20g (洗净)
百合 : 20g (洗净)
红枣 : 10g或蜜枣 : 15g (去核)
胡萝卜 : 100g (洗净, 切段)
玉米 : 2条 (洗净, 切段)

材料2
瘦猪肉 : 250g (洗净, 切块, 川烫过)
盐 : 适量

方法:
1) 将材料1放入锅内, 加清水适量, 浸泡1小时
2) 用大火煮沸后, 放入瘦肉煮一会儿, 改为小火,
再煲2小时, 用盐调味即可

* 此汤有滋阴、安神、养颜的作用。
* 如皮肤粗糙干燥,肤色晦暗,口干,睡眠不宁,大便
干燥等可常饮用。
* 适合大部分体质的人(体质较燥热者用蜜枣,体质较
虚者用红枣)

Red Dates Chicken Soup

Ingredients:

Chicken thigh ~ 2pcs
Red dates(remove seeds) 20g (16pcs)
Longan 5g
Wolfberries 1 tbsp
Boiled Water 2 cup

Method:

1) Wash chicken, drain, set aside
2) Wash red dates, longan, wolfberries, place them in slow cooker.
3) Put in chicken, add in 2 cup of boiled water.
4) Medium heat for 2 hours. and serve when hot.

Pork Ribs with Cestnut Soup

~~Pork Ribs with chestnut soup~~


Ingredient:

Pork Ribs: 600g
Fresh chestnut: 500g (boil for 10 mins, let it cool, remove skin)
Lotus seeds: 200g (boil for 10 mins, let it cool, remove skin)
Red dates: 15pcs (remove seed, wash)

Method :

1) Bring pork ribs to a boil, wash, drain, set aside
2) Boil 1/2 a pot of water, put in fresh chestnut,lotus seeds,red dates boil for 1½ hour over medium heat till it's cooked
3) Add pork ribs, simmer for another 1 hour
4) Add salt to taste

Cranberry Beans & Pork Ribs Soup

Last Sunday i went to market i saw those "Cranberry Bean" at the vegetable stalls. In Singapore, cranberry beans are known as Pearl Beans(珍珠豆) but in Italy and Spain They will call it's as Cranberry Bean.so i bought some to cook with Carrots,Potato,Celery and Pork Ribs...



Ingredients:

300g Pork Ribs
150g Cranberry Beans (珍珠豆)
1 Carrots
1 Potato
2 Celery

Methods:

1. Wash, trim and blanch pork ribs in boiling water, rinse and set aside.
2. Wash, Carrots,Potato,Celery and cut into small pieces
3. Remove the Cranberry Beans from the Pods, wash and drain.
4. Bring a pot of water(about 1.5 liters) into slow cooker , add in all the ingredients except the Celery, using low heat for 2 hours then add in the Celery and continue to simmer for another 30 minutes.
