Kid’s Happy Meal

“Kid’s Happy Meal! It’s the Home cooked ABC Soup!”



Serves 4

Ingredients

6 pieces of leaned meaty pork ribs, blanched
2 regular carrots, cut into medium pieces lengthwise, and halves each piece if too thick, especially the beginning part.
2 ear of sweet corn, chopped into 8 pieces lengthwise (about 4cm each)
2 medium potatoes, peeled and cut into big pieces
1 large onion, peeled and cut into quarters
1 fresh tomato, halves
1 cup of whole button mushroom
Pinch of salt to taste
1 teaspoon of sesame oil (or vegetables oil)
1 big pot of water (about 1500ml), 50% filled

Method

1) Heat up a pot, add oil. Sauté onion till fragrant. Quickly pour in water and bring to a boil over high heat.

2) Add blanched pork ribs, mushrooms and all vegetables, except for tomato.

3) Reduce heat to low fire. Covered with lid. Simmer for 1 hour, or longer, if desired. Add tomato and sprinkle salt to taste, 5 min before heat off. Serve hot.

Radish Carrots And Pork Ribs Soup

Ingredients:

1 Medium Radish, skinned, cut into chunks
1 Medium Carrots, skinned, cut into chunks
600 g pork ribs
1.5 Liter Water

Method:

1. Half-fill the big pot with water.

2. Boil the water.

3. Throw radish, carrots, and pork ribs into boiling water.

4. Cook the soup over a small fire about 2-3 hours

5. Serve hot.

ABC Soup

Ingredients

2 onions
2 carrots
2 tomatoes
2 potatoes
2 corns
600 g pork ribs or chicken (chopped, can use either one or both)
water

Directions

1. Half-fill the big pot with water.

2. Boil the water.

3. Throw tomatoes, carrots, potatoes, onions and pork ribs/chicken into boiling water.

4. Cook the soup over a small fire about 1-4 hours(the longer the time, the soup will have more flavor).

5. Serve hot.

Dang Gui Huai Shan Chicken Soup 当归淮山熬鸡汤

Ingredients:

1/2 Chicken 鸡
5-6 Slices Of Dang Gui 当归片
4-5 Slices Of Huai Shan 淮山片
3-4 Piece of Dang Shen 当参
6 Red Dates 红枣
1 Tablespoon Gou Qizi 枸杞子
5g Dried Longan, 龙眼干

Methods:

1. Wash, trim and remove the fats from the chicken. large sections and blanch in boiling water then rinse and set aside.

2. Rinse all the dried herbs and set aside.

3. Bring a pot of 1.2 Litres of Water to boil then add in all the ingredients and bring to boil again.

4. Transfer all to a slow cooker and simmer on Auto for about 3 Hours.

5. Season the soup with salt.

Ingredients:
1 Small Black Chicken 黑鸡
5-6 Slices Of Dang Gui 当归片
8 Red Dates 红枣
2 Tablespoon Gou Qizi 枸杞子

Methods:
1. Wash, trim and remove the skin and fats from the chicken. large sections and blanch in boiling water then rinse and set aside.
2. Rinse all the dried herbs and set aside.
3. Bring a pot of 1.2 Litres of Water to boil then add in all the ingredients and bring to boil again.
5. Transfer all to a slow cooker and simmer on Auto for about 3 hours
6. Season the soup with salt if you prefer and serve warm.

Dang Shan Bei Qi Chicken Soup

Ingredient:

Chicken : 500g (cut into pieces)
Dang shan : 20g
Bei qi : 20g
Red dates : 5 nos (remove seeds)
Wolfberries : 15g
Dried longan : 15g
Chuan xiong : 10g
Huai Shan: 10g

Method:

1)Bring Chicken to boil, drain and set aside.

2)Wash Ingredient, put them into a big pot, pour in 1.5 liters of water, bring to a boil over high heat, boil for another 1 hour over low heat

3)Add in Chicken, simmer for another 1 hour then turn off heat.

Peanut & Pig's Trotter Soup 花生猪脚汤

Ingredients:

Pig's Trotter 猪脚 1 piece(切块)
Fresh groundnuts 花生 400g
Red Dates 红枣 12pcs
Garlic 蒜 6pcs
Ginger 姜 150g (切片)

Instructions:

1)Clean & split Pig's Trotter.

2)Boil Pig's Trotter with groundnuts in water & pour away water.

3)Put fresh water to boil and add in red dates,ginger and garlic to simmer on medium heat for about 30 minutes then transfer to a slow-cooker and simmer on High Heat 1 hour and switch to Low Heat for another 2-3 hours

4.Season with salt then serve hot

Lotus & Pork Ribs Soup

Ingredients:

$3-$4 Of Pork Ribs (软骨)
1 Medium Piece of Fresh Lotus (连藕)
4-5 Red Dates (红枣)
2 Honey/Candied Dates(蜜枣)
1-2 Stalk Dang Sheng (当参)
1 Tablespoon Wolfberries (枸杞子)

Methods

1.Wash and trim off the fats from the pork ribs then blanched in hot water and rinse well

2.Next boil a pot of water around 1.5 liters then add in all the ingredients.

3.Simmer on medium heat for about 15 minutes then transfer to a slow-cooker and simmer on High Heat 1 hour and switch to Low Heat for another 2-3 hours

4.Season with salt then serve hot

韩国泡菜汤 Kimchi Soup

Ingredients

120g : Minced Pork 剁碎的猪肉
480g : Firmly packed sliced kimchi 韩国泡菜
1 piece : Beancurd 豆干
1 : Spring onions 洋葱
2 teaspoons : Garlic 蒜茸
2 teaspoons : Chili powder 辣椒粉
1 tablespoon : Cooking oil

~ 韩国泡菜/Kumchi ~



Directions

1.Use a cast iron pot. Heat oil and stir-fry pork until it changes color.
2.Add in the garlic and kimchi and stir-fry for 1 minute or till fragrant.
3.Bring to a boil and simmer for 1 - 2 minutes.
4.Add in the beancurd and chili powder, return to boil, and simmer for 1 - 2 minutes.
5.Sprinkle with scallions and sliced chilies and served hot.

红白萝卜排骨汤

材料:
500g 排骨
1条 白萝卜(去皮, 切小块)
1条 红萝卜(去皮, 切小块)

煮法:
1) 把排骨洗净, 沥干水分..
2) 将红萝卜,白萝卜去皮, 切小块..
3) 在锅里倒入适量的水..
4) 将所有材料放入..
5) 煮到所有材料都入味了就可以熄火..

Huai Shan Cream Soup

Ingredients:
1 Piece Of Huai Shan(淮山) about 50g
4-6 Water Chestnuts(马蹄)
1 Packet of Golden Needle Mushroom
1 Hotdog or Ham
400ml of Frozen Mixed Veggies

Sauce:
1 Teaspoon Flour
1 Tablespoon Butter or margarine
1 cup of Water
1/4 Teaspoon Black Pepper to taste
1 Tablespoon Salt or to taste


Methods:
Cook the butter & flour until smooth add in 400ml of water cook for 2 minutes until smooth, add in at Huai Shan(淮山),Water Chestnuts(马蹄),Golden Needle Mushroom,hotdog or Ham and Frozen Mixed Veggies cook for 5 minutes. Season with black pepper and salt. Can serve together with Onion bread.

西洋菜汤

Ingredients:

300g Of Pork Ribs

Watercress 西洋菜

40g Sweet & Bitter Almond(南北杏)

6 Red Dates (红枣)

1 Honey/Candied Dates(蜜枣)

1 Teaspoon Ji Zi (杞子)




Methods:


1. Wash and trim off the fats from the pork ribs then blanched in hot water and rinse well.

2. Next boil a pot of water around 1 litres then add in all the ingredients boil 15 minutes.

3. Add in the pork ribs and boil 15minutes.

4. Add in watercress 西洋菜 and boil 20minutes.

5. Season with salt.
