红糟鸡
Sesame oil/cooking oil (own judgment)
150g Young ginger (slice)
1 pc Whole Chicken (cut into pieces)
3 tbsp Red rice wine residue
1 cup Red rice wine/Glutinous rice wine
Method:
1) Using medium heat to heat up sesame oil,
fry ginger slices till fragrant
2) Add in chicken pieces and continue to stir fry
3) Add in Red rice wine residue, stir through
4) Pour in ½cup of Red rice wine, stir through
5) Pour in 1 cup of water, bring to a boil
6) Cover with lid, simmer for 15mins till chicken is cooked
7) Add ½ tsp of salt, 1 tbsp of sugar and remaining
½ cup of Red rice wine, stir well. Serve.

Dang Shan Bei Qi Chicken Soup
Ingredient:
Chicken : 500g (cut into pieces)
Dang shan : 20g
Bei qi : 20g
Red dates : 5 nos (remove seeds)
Wolfberries : 15g
Dried longan : 15g
Chuan xiong : 10g
Huai Shan: 10g
Method:
1)Bring Chicken to boil, drain and set aside.
2)Wash Ingredient, put them into a big pot, pour in 1.5 liters of water, bring to a boil over high heat, boil for another 1 hour over low heat
3)Add in Chicken, simmer for another 1 hour then turn off heat.

Mushroom Pasta
~Pasta Sauce~
Ingredient:
Pasta : 180g
Fresh mushrooms : 3nos (cut into pieces)
Button mushrooms : 5-6 nos (slice)
Green Bell Pepper : ½ medium size (cut into pieces)
Red Bell Pepper : ½ medium size (cut into pieces)
Ham : 3pieces (cut into small pieces)
Melted butter : 2 tbsp
Garlic : 2 clove (chopped)
1)Cook pasta till al dente. Reserve ½ cup of pasta water. Drain the pasta and set aside. You might want to toss them with some olive oil so that they won’t stick together.
2)Heat pan, and add the butter to melt.
3)Saute the garlic till fragrant or till they are slightly browned.
Add Fresh/Button mushrooms and Green/Red bell peppers and fry for about 2 to 3 mins.
Add white cooking wine and the reserved pasta water.
Add Ham.
4)Add the Pasta Sauce last.
5)Turn off the heat, throw in the pasta and toss quickly.
6)Serve on plate and add some parmesan cheese if you like.

Yesterday we went to Jurong Pt for shopping. Hubby told me Boon Lay interchange got one new Donuts shop. So we went for a look... Wow... those donuts look so colour full & yummy...Hubby said want to buy some and try...so i decided buy 2 to try first..."Taste Good" Will go and buy some more next time... Yummy Yummy~~~~

Orange Rainbow Rice
Ingredient A:
Rice : 3cups
Ingredient B: (mix well)
Orange juice : 500g (6 oranges)
Water : 300g
Salt : ½ tsp
Melted butter : 2 tbsp
Ingredient C:
Melted butter : 2 tbsp
Shallots : 2 pcs (chopped)
Garlic : 2 clove (chopped)
Ingredient D:
Fresh mushrooms : 5nos (cut into pieces)
Button mushrooms : 1 small can (slice)
Green Bell Pepper : 1no (cut into pieces)
Red Bell Pepper : 1no (cut into pieces)
Crab Sticks : 8nos (cut into pieces)
Salt : ¼ tsp
Method:
1) Washed the rice, drained, place them in the rice cooker
2) Stir in Ingredients B
3) Press the cook button start to cook rice
4) Heat up wok over medium heat, fry Ingredients C till
fragrant
5) Add Ingredients D accordingly and stir well, turn off heat,
dish out, combine well with the orange cooked rice
6) Cover with lid, leave it for another 10 mins, serve

Lotus Seed & Barley Soup
Ingredients:
100g Pearl Barley
50g Lotus Seed
50g Lily
1 White Fungus
5 cups of water
90g rock sugar,
Method:
1) Put the white fungus in water for 30 min.
2) Bring water to a boil and add lotus seed, barley and lily. Cover pot and boil for 15 minutes at high heat.
3) Add in the white fungus. Simmer for another hour, before adding the rock sugar.
4. Serve hot or cold.

My Dad Birthday
This coming Saturday is my dad birthday...me & my sister decided to celebrate for him in advance. Here are what i cooked for him & my family.

Ingredients:
Half Chicken
Young ginger : 100g (slice)
Seasoning (mix well)
Rice wine : 150g
Light soya sauce : 50g
Sugar : 30 – 50g
Dark soya sauce : ½ tsp
Black vinegar : 1 tsp
Sesame Oil : 1 tsp
Method
1) Wash chicken, drain, cut into pieces,, mix with 1 tbsp of corn flour, set aside.
2) Heat wok with oil, fry ginger slice till golden brown
3) Add chicken fry till fragrant
4) Add seasoning, stir well, bring to a boil
5) Cover with lid, simmer for 15mins over medium heat till its cooked, turn off heat. Dish out

Peanut & Pig's Trotter Soup 花生猪脚汤
Ingredients:
Pig's Trotter 猪脚 1 piece(切块)
Fresh groundnuts 花生 400g
Red Dates 红枣 12pcs
Garlic 蒜 6pcs
Ginger 姜 150g (切片)
Instructions:
1)Clean & split Pig's Trotter.
2)Boil Pig's Trotter with groundnuts in water & pour away water.
3)Put fresh water to boil and add in red dates,ginger and garlic to simmer on medium heat for about 30 minutes then transfer to a slow-cooker and simmer on High Heat 1 hour and switch to Low Heat for another 2-3 hours
4.Season with salt then serve hot

Stir-fry baby dou miao
Wow...this is my first time heard my hubby said my stir-fry baby dou miao very nice...maybe because i add some fry shallots.

Lotus & Pork Ribs Soup
Ingredients:
$3-$4 Of Pork Ribs (软骨)
1 Medium Piece of Fresh Lotus (连藕)
4-5 Red Dates (红枣)
2 Honey/Candied Dates(蜜枣)
1-2 Stalk Dang Sheng (当参)
1 Tablespoon Wolfberries (枸杞子)
Methods
1.Wash and trim off the fats from the pork ribs then blanched in hot water and rinse well
2.Next boil a pot of water around 1.5 liters then add in all the ingredients.
3.Simmer on medium heat for about 15 minutes then transfer to a slow-cooker and simmer on High Heat 1 hour and switch to Low Heat for another 2-3 hours
4.Season with salt then serve hot
