Since I had a few bottles of BRAND’S® Essence of Chicken left in the cabinet, and my Dear now days busy with he works and study in the same time... So i decided to make this for him.
Ingredients:
1/2 Portion of a medium chicken
3 Piece of Dang Shen (党参)
2 Piece of Dang Gui (当归)
2 Piece of Huai Shan (淮山片)
10g of Chuan Xiong (川芎)
5 pcs Red dates(红枣)(remove seeds)
1 tbsp of Wolfberries(杞子)
3 Slices Of Ginger
1 cup of Boiled Water
1 bottle of BRAND’S® Essence of Chicken
Seasoning
1 tsp light soya sauce
1 tsp sesame oil
1/4 tsp pepper
1 tsp shaoxing wine
Method:
1) Wash chicken, drain and seasoning the chicken for 10min.
2) Wash Dang Shen (党参),Dang Gui (当归), Huai Shan (淮山片),Chuan Xiong (川芎),
red dates (红枣), wolfberries(杞子),Ginger place them in stewing pot
3) Put in chicken, add 1 cup of water, cover with lid
4) Place stewing pot into a bigger pot of boiling water
5) Stew over medium heat for 2 hours
6) Remove stewing pot, add 1 bottle of BRAND’S® Essence of Chicken , and serve when hot.

WHITE FUNGUS SOUP ~ 银耳养神汤 ~
WHITE FUNGUS SOUP
Ingredients 1:
. Dried lily bulb 百合- 15g
. Dried lotus seed 莲子- 15g
Ingredients 2:
. White fungus 银耳- 15g (soak till soft, wash clean)
. Dried wolfberry 杞子- 15g
Ingredients 3:
. Quail egg 鹌鹑蛋- 10 or Egg 蛋- 2 (boiled and shelled)
. Dried logan flesh 桂圆肉- 15g
Ingredients 4 (either A or B):
A - Salt to taste
B - Rock sugar or honey to taste
Method:
1. Wash Ingredients 1, put in a pot, add sufficient water to soak for 1 hour.
2. Add Ingredients 2, bring to boil then turn to medium/small fire to cook for 1 hour until soft.
3. Add Ingredients 3, continue to cook for 10 min.
4. Add Ingredients 4 according to your taste.
Functions:
Improve sleep, strengthen memory, restore strength, good for ladies' complexion.

ABC Soup
Ingredients
2 onions
2 carrots
2 tomatoes
2 potatoes
2 corns
600 g pork ribs or chicken (chopped, can use either one or both)
water
Directions
1. Half-fill the big pot with water.
2. Boil the water.
3. Throw tomatoes, carrots, potatoes, onions and pork ribs/chicken into boiling water.
4. Cook the soup over a small fire about 1-4 hours(the longer the time, the soup will have more flavor).
5. Serve hot.

Sea-Cucumber With Chicken
Today i decided to cook the Sea-Cucumber With Chicken because i still left some Sea-Cucumber in the fridge. ; )
Ingredients:
150gm Sea Cucumber - cut into wedges,
600gm Chinken - cut into pieces,
2 tbsp oyster sauce,
1 tbsp chinese cooking wine,
Pepper and Sugar to taste.
Method:
Place all the ingredients in claypot.
Bring to boil and simmer over low heat for 30 minutes.
Add peeper and sugar to taste. Serve.

Chilli Prawns
Ingredients
600g green prawns
1 egg
5 garlic
3 tablespoons sweet chili sauce
Method
1.Preheat wok, then add oil and garlic for about 2 minutes.
2.Add in the prawns and stir fry on high heat for about 4 to 5 minutes
3.Add the sweet chili sauce to the prawns and continue stir frying for about 3 minutes then add in the egg.

新年甜品 *五福临门*
Ingredients:
Red dates 红枣(remove seeds) : 100g (washed, soak for 30min, drained)
Dried mandarin orange 橘饼: 2 pcs
Lotus seed 莲子: 200g
(boiled with hot water, soaked overnight or use ready-packed)
Gingko nut 白果: 250g (canned or ready-packed)
Dried longan 龙眼 : 100g
Pandan leave 香兰叶 : 4 pcs
Method
1) Boil red dates, dried mandarin orange and lotus seeds
in a pot (water own judgment), bring to boil over high heat
2) Add in knotted pandan leaves, simmer over medium
low heat until lotus seeds are soft and cooked.
3) Add in gingko nuts and dried longan, further boil for
10 min. Remove pandan leaves. Ready to serve hot or chilled.
(Note: If you desire a sweeter dessert, may add in small amount of brown rock sugar.)
