Red Dates Chicken Soup

Ingredients:

Chicken thigh ~ 2pcs
Red dates(remove seeds) 20g (16pcs)
Longan 5g
Wolfberries 1 tbsp
Boiled Water 2 cup

Method:

1) Wash chicken, drain, set aside
2) Wash red dates, longan, wolfberries, place them in slow cooker.
3) Put in chicken, add in 2 cup of boiled water.
4) Medium heat for 2 hours. and serve when hot.

Pork Ribs with Cestnut Soup

~~Pork Ribs with chestnut soup~~


Ingredient:

Pork Ribs: 600g
Fresh chestnut: 500g (boil for 10 mins, let it cool, remove skin)
Lotus seeds: 200g (boil for 10 mins, let it cool, remove skin)
Red dates: 15pcs (remove seed, wash)

Method :

1) Bring pork ribs to a boil, wash, drain, set aside
2) Boil 1/2 a pot of water, put in fresh chestnut,lotus seeds,red dates boil for 1½ hour over medium heat till it's cooked
3) Add pork ribs, simmer for another 1 hour
4) Add salt to taste

I found this Chocolate Cupcake recipe from Martha Stewart's website.

~~ CHOCOLATE CUPCAKES ~~

Ingredients
Serves 12
3/4 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup sugar (I used 3/4 cup)
3 large eggs
1 teaspoon pure vanilla extract
1/2 cup sour cream

Directions
1) Preheat oven to 350 degrees. Line 12-cup standard muffin tin with paper liners.

2) In a medium bowl, sift together cocoa, flour, baking powder, and salt; set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then beat in vanilla. Reduce speed to low. Add the flour mixture alternating with sour cream, starting and ending with the flour mixture.

3) Divide batter among cups, filling each 3/4 full. Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes. Cool 5 minutes in pan, then transfer to a wire rack to cool completely.

~~ BUTTERCREAM ICING ~~

100g butter
100g shortening
1 tsp vanilla essence
4 cups icing sugar (sifted)
2 tbsp milk
(drops of colouring)

Chicken Satay

Those yummy "chicken satay" made by my aunt...





Ingredients
Spice Paste:
1 teaspoon of coriander seeds
2 stalks lemon grass
6 shallots (peeled)
2 cloves garlic (peeled)
4 tablespoons of cooking oil
1 teaspoon of chili powder
2 teaspoons of turmeric powder (kunyit)
4 spoons of Kecap Manis (ABC brand from Indonesia recommended)
1 spoon of Oyster Sauce (Lee Kam Kee brand recommended)
Others:
Bamboo skewers (soaked in water for 2 hours to avoid burning)
1 cucumber (skin peeled and cut into small pieces)

Directions
Cut the chicken meat into small cubes. Grind the Spice Paste in a food processor. Add in a little water if needed. Marinate the chicken pieces with the spice paste for 10-12 hours. Thread the meat on to bamboo skewers and grill for 2-3 minutes each side. Serve hot with fresh cucumber pieces.

~~ Pandan Cake ~~

Optima flour : 300g
Egg : 150g
Coconut milk : 100g
Pandan paste : ½ tsp

Method:
1) Place all ingredient in a mixing bowl.
2) Beat at high speed for 20 min.
3) Pour batter into pandan cake mould.
4) Bake at 200°C pre-heated oven for 25 - 30 min.

~~ Puff Buns ~~

Ingredients A
Self raising flour : 100g

Ingredients B (Mix well till sugar dissolved)
Egg : 120g
Sugar : 60g
Milk : 60g
Vanilla oil : ¼ tsp

Ingredients C
Melted butter : 50g

Method:
1) Place pre-greased baking cup into oven, pre-heat for 10 mins at 190°C
2) Sift self raising flour into a mixing bowl
3) Add in Ingredients B, combine well
4) Add in melted butter, combine well
5) Remove baking cup from oven, fill in batter till 2/3 full, bake for 20 – 25 mins till golden brown and risen , remove, serve

Mango Sago Dessert ~~ 芒果西米露 ~~

Ingredients:

1L of Mango Juice Drink (use marigold brand or any packet mango juice)
600gm of Ripe Mango (abt 2 mangoes)
150gm of Sago Pearl
1 Can of Evaporated Milk (carnation brand)
Sugar 5 tbsp

Method:

1)Soak sago for 3-4hrs, then boil till cooked; drained.

2)Remove mango’s skin and seed; mashed the meat.

3)Boil the mango juice drink and sugar till the sugar melt; remove from fire.

4)Add in cooked sago and mashed mango, stir well; let it cool before chilling it in a fridge.

5)Add in the milk before serving.

Sago Pudding

Ingredient:
150g sago
200g palm sugar
125 ml water
Pandan leaves
100ml coconut milk
A pinch of salt

Method:
1. Bring palm sugar, panadan leaves and water to boil, simmer until palm sugar melts. Strain syrup and set aside to cool and chill in fridge.

2. Bring coconut milk and salt to boil. Set aside to cool and chill in fridge.

3. Bring a pot of water to boil. Add in the sago cook sago till transparent.

4. Wash cooked sago under a running tap washes away the starch and strain.

5. Divide sago into individually cups and chill sago for 2 - 3 hours in fridge.

6. Serve sago pudding with palm sugar syrup and coconut milk.

Pomelo Mango Sago ~~ 杨枝甘露 ~~

~~Mango with Pomelo Dessert~~

Ingredient

600gm mango (abt 2 mango)
1 bowl of mango juice (use marigold brand or any packet mango juice)
1/2 bowl of evaporated milk (carnation brand)
300 gm pomelo (spit into small pieces)
1 bowl of water (boiled & cool down water)
cornflour mixture (in a bowl)
1 tbsp cornflour + 1 tbsp tap water

Method

1. Bring 1 bowl of water + 50gm sugar to boil until sugar dissolve, add in cornflour mixture, stir in slow fire until the mixture is smooth then off fire and leave it to cool down.

2. Cut the mango from both side, and cut the mango fresh into cube.Then the remaing mango put in a bowl, add 1 bowl of water then send to blend. Then put aside.

3. 300gm of pomelo, split them into small pieces.

4. When the pot is cold, add the grinded mango juice, cube mango, 1 bowl of mango juice (pkt), half bowl of carnation milk, then stir, lastly add in pomelo to stir, if too thick, add water.

5. Serve it as cold dessert.

I saw this Pandan Cup Cake at 我的厨房笔记... So i decided to make this for gal... and my gal LOVE its...







Optima flour : 200g
Egg : 130g
Coconut milk : 65g
Pandan paste : ½ tsp

Method:
1) Place all ingredient in a mixing bowl
2) Beat at high speed for 15 min
3) Pour batter into prepared paper cups in mould
4) Bake at 200°C pre-heated oven for 20 min.

Cranberry Beans & Pork Ribs Soup

Last Sunday i went to market i saw those "Cranberry Bean" at the vegetable stalls. In Singapore, cranberry beans are known as Pearl Beans(珍珠豆) but in Italy and Spain They will call it's as Cranberry Bean.so i bought some to cook with Carrots,Potato,Celery and Pork Ribs...



Ingredients:

300g Pork Ribs
150g Cranberry Beans (珍珠豆)
1 Carrots
1 Potato
2 Celery

Methods:

1. Wash, trim and blanch pork ribs in boiling water, rinse and set aside.
2. Wash, Carrots,Potato,Celery and cut into small pieces
3. Remove the Cranberry Beans from the Pods, wash and drain.
4. Bring a pot of water(about 1.5 liters) into slow cooker , add in all the ingredients except the Celery, using low heat for 2 hours then add in the Celery and continue to simmer for another 30 minutes.

明目降火汤

I saw this 明目降火汤 at "我的厨房笔记"
* 功能清肝明目,滋阴降火
* 适用于因熬夜,烟酒过多,或过食辛辣燥热,煎炸食物而至眼红,或眼睛干燥,涩痛,头痛,咽喉干燥或疼痛,口渴等
* 夜班工作者,或用眼过多者 (如长期应用电脑)
* 可作为日常保健饮料
So i decided to make this for hubby to drink.




~~ 明目降火汤 ~~

材料1
石斛 : 15克
人参须 : 15克
枸杞子 : 15克

材料2 (洗净, 用滚水川烫过, 待用)
瘦肉/排骨 : 300克

材料3 (用纱布包好)
菊花 : 12克

方法
1) 将材料1洗净,放入锅内,加入4至10碗水,浸泡一小时
2) 加入瘦肉或排骨,大火煮开,改用中小火煮1至2小时
3) 加入菊花 (用纱布包) 再煮5分钟
4) 加入盐调味,喝汤吃肉

注 : 可选择不加入瘦肉或排骨,改用冰糖或蜜糖调味,当茶饮用

Dried Chilli Spicy Chicken ~ 宫保鸡丁 ~

Ingredients A:
Chicken : 500g (wash, cut into cube)

Ingredients B:
Oyster sauce : 1 tbsp
Sesame Oil : 1 tbsp
Pepper : 1 tbsp
Corn flour : 1 tbsp

Ingredients C:
Dried chilli : 10 nos (washed, soaked, cut into strips)

Ingredients D:
Onion : 1 no (slice)
Garlic : 2clove (slice)

Ingredients E: (mix well)
salt : ½ tsp
Oyster sauce : 1 tbsp
Sesame oil : 1 tbsp
sugar : 1 tbsp
Vinegar : 1 tsp
Water : 250g

Ingredients F:
Green Bell Pepper : 1no (cut into small pieces)
Baked cashew nuts : 50g

Methods
1) Place chicken into a bowl, marinate with Ingredients B for ½ an hour
2) Heat up wok with 2 tbsp of oil, stir fry dried chilli till fragrant
3) Add slice onion and garlic, stir fry till fragrant
4) Pour in chicken, stir fry well
5) Stir in Ingredients E, simmer over medium heat till thickened, turn off heat
6) Add in Ingredients F, stir well, dish out

Radish Carrots And Pork Ribs Soup

Ingredients:

1 Medium Radish, skinned, cut into chunks
1 Medium Carrots, skinned, cut into chunks
600 g pork ribs
1.5 Liter Water

Method:

1. Half-fill the big pot with water.

2. Boil the water.

3. Throw radish, carrots, and pork ribs into boiling water.

4. Cook the soup over a small fire about 2-3 hours

5. Serve hot.

Yam Rice

Ingredients:

2 cups rice, washed
1 small yam - cut into small pieces
3 stalks celery - dice
300gm chicken or 3 layer meat
half a clove of garlic - chopped
2 tablespoon oil
3 cups water (Must cover over the rice)



Method:

1. Season the chicken or meat with:
(soya sauce, oyster sauce, dark soya sauce, pepper)

2. Heat oil, stir fry garlic and yam till fragrant




3. Add meat and stir fry till turned colour. Add rice and stir well. Add more dark soya sauce and soya sauce.




4. Remove and put into rice cooker, add water, celery and cook as usual.
